BUTCHER Know the best | find the great local Butcher

If you’re a meat-eater, you’ve heard it before: You should be getting your hands on the best butcher shop. That’s why we love whole-animal butchery—not only is it more sustainable to shop at a store that sells every part of the animal from the nose to the tail, it’s also better for your health to eat pasture-raised meat that’s free of hormones. These butcher shops across the country are doing it right.

Red Apron sources its pork entirely from Animal Welfare Approved farms, which suggests it is the best of the simplest. The master butcher also makes their own charcuterie and provisions, so you can get your housemade rillettes, mustard, and pickles all in one place.

What made you want to become a butcher?

I was in the corporate world for so many years. I was working in IT and running a small business when I realized one day that it was not fulfilling my soul anymore, so I enrolled in a one-day pig butchery class. I have been doing sausage making my entire life with my family, and I always enjoyed doing it, so after the course, I couldn’t stop thinking about it. I discussed it with my family and decided to take the plunge and change careers. At first, I was doing apprenticeships in the shops around NYC to learn the craft and to make sure I wanted to do it. This led to a full-time position at a shop in the West Village, then eventually to Foster Sundry.

Lamb and Mutton

Both lamb and mutton are very similar types of meat, with one fundamental difference;
Lamb is from a sheep less than one-year-old
Mutton is the meat of an adult sheep
Just like beef and pork, there are a variety of popular lamb cuts — perhaps lamb chops are the most popular.
